How we make the perfect Pastel de Nata

The steps to make the Perfect Artisan Pastel de Nata starts with the selection of the finest, most exclusive and freshest, ingredients, whilst being conscious to source from sustainable producers.

The Dough

The dough is flakey, crispy, light and is divided in two steps:

Lamination & the art of creating the dough

Artisan           complex

Opening of the Dough

The most complex of all steps, which requires precision for the perfect Pastel de Nata. Carefully crafting the dough into the moulds with a special technique.

The Custard

The art of making the custard, requires a long process that involves many delicate procedures. If done correctly, you are left with a rich, creamy and balanced custard with a hint of lemon and cinnamon.

The Oven

Finally, the cooking process, involves a high temperature, that will produce the perfect Pastel de Nata. You are looking to achieve a flakey, crispy, creamy, super rich and delicious pastel de nata that will leave you wanting more!

Of course, you can always come and see our “theatre” and watch as our chefs work through this process in front of you, bringing the Pastel de Nata to life.
